Lemon Shortbread Cookies


Cream together until smooth:
1 stick butter or margarine
1 egg
1 cup sugar
1 teaspoon lemon or vanilla extract

2 cups flour
1/4 teaspoon salt
3 teaspoons baking powder

Gradually add flour mixture to creamed ingredients until well mixed. Roll the dough into balls and then sugar. Just flatten with a fork or cookie stamp. Bake 10-12 minutes at 350° F.
