Mall Pretzels
1 (.25 oz) pkg. active dry yeast
2 TBSP brown sugar
1 1/8 tsp salt
2 cups warm water
4 cups flour
2 cups warm water
2 TBSP baking soda
2 TBSP melted butter
2 TBSP coarse kosher salt
In a large bowl, dissolve the yeast, brown sugar and salt in 2 cups warm water. Stir in flour, and knead dough on a floured surface until smooth and elastic. Place in a greased bowl, cover and let rise one hour.
Combine 2 cups warm water and baking soda in a 8 inch square pan.
After dough has risen, cut into 12 pieces. Toll each piece into a 3 foot rope. Twist into a pretzel shape and dip into the baking soda solution. Place on parchment paper covered cookie sheets (I just sprayed mine with Pam). Let rise 15-20 minutes.
Bake at 450 degrees for 8-10 minutes. Brush with melted butter and sprinkle with coarse salt, garlic salt or cinnamon sugar.
