Cake Mix Recipes: Butterscotch Spice Cookies
1 pkg spice cake mix
2 large eggs
1/2 cup vegetable oil
1 tsp vanilla extract
1 cup butterscotch chips
Preheat oven to 375°F. Combine cake mix, eggs, oil and vanilla extract in large bowl. Beat at low speed with electric mixer until blended. Stir in butterscotch chips. Drop by rounded teaspoonfuls 2-inches apart onto ungreased baking sheets.
Bake at 375°F for 8 to 10 minutes, or until set. Cool 2 minutes on baking sheets. Remove to cooling racks. Cool completely. Store in airtight container. Makes about 3 dozen cookies.
