Oatmeal Cake

1 cup oatmeal
1 ½ cups boiling water
1 stick butter (room temp)
1 cup brown sugar
1 cup white sugar
2 eggs
1 ½ cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon nutmeg
1 cup raisins

Pour boiling water over oatmeal, let stand 20 minutes.Cream sugar, butter, eggs. Sift dry ingredients and add to creamed mixture. Add oatmeal mix and raisins.Pour into 9 x 13 pan (well greased) and bake 30 minutes. Frost while warm.


Frosting Recipe

½ cup melted butter
1 cup brown sugar
½ cup chopped nuts (pecans or walnuts)
½ cup coconut

Mix together and spread on baked warm cake...carefully. May have to spoon it on at first. Place under broiler until it starts to bubble and gets ever so lightly browned. Watch carefully or it will BURN! Let cool before eating.
