Mall Pretzels


















1 (.25 oz) pkg. active dry yeast
2 TBSP brown sugar
1 1/8 tsp salt
2 cups warm water
4 cups flour

2 cups warm water
2 TBSP baking soda
2 TBSP melted butter
2 TBSP coarse kosher salt

In a large bowl, dissolve the yeast, brown sugar and salt in 2 cups warm water. Stir in flour, and knead dough on a floured surface until smooth and elastic. Place in a greased bowl, cover and let rise one hour.

Combine 2 cups warm water and baking soda in a 8 inch square pan.

After dough has risen, cut into 12 pieces. Toll each piece into a 3 foot rope. Twist into a pretzel shape and dip into the baking soda solution. Place on parchment paper covered cookie sheets (I just sprayed mine with Pam). Let rise 15-20 minutes.

Bake at 450 degrees for 8-10 minutes. Brush with melted butter and sprinkle with coarse salt, garlic salt or cinnamon sugar.

Makes 12

Garlic Potato Bread

1 cup water
2 T. butter
2 cups bread flour
3/4 cup instant mashed potato flakes
1 T. sugar
1-1/2 tsp. salt
1 garlic clove - minced
1-1/4 tsp. bread machine yeast


Place all the ingredients in your bread machine in the order recommended in your machine's owner's manual. Select the basic bread cycle and the light crust setting. Bake and enjoy!

Mulligan Stew


















8 ounces lean beef stew meat, cut into small pieces
1 (10 3/4-ounce)can tomato soup
1 cup water
1 teaspoon dried parsley flakes
1 1/2 cups sliced carrots
2 cups (10 ounces) diced raw potatoes
1/2 cup chopped onion
1 cup sliced celery

In a large skillet sprayed with cooking spray, brown meat for 10 minutes. Stir in tomato soup, water, and parsley flakes. Add carrots, potatoes, onion, and celery. Mix well to combine. Lower heat, cover, and simmer for 35 to 45 minutes or until meat and vegetables are tender, stirring occasionally.

Gelatin Popcorn Balls












12 cups popped popcorn
1 cup light corn syrup
1/2 cup sugar
1 pkg. (4 serving size)Gelatin, any flavor

Place popcorn in large bowl. Mix syrup and sugar in saucepan; bring to boil. Remove from heat. Add gelatin; stir until dissolved. Pour over popcorn; mix well. Cool about 5 minutes. Shape into 18 balls, each about 3 inches in diameter or spread on a cookie sheet to cool.

St. Patrick’s Day Scones












4 cups flour

1 cup sugar

½ t. salt

4 t. baking powder

1 ½ cups dark raisins

2 sticks (1 cup) margarine

2 eggs

1 cup milk

Egg Wash:

1 egg

1 T. milk


1.       Heat oven to 350. 

2.       Whisk together flour, sugar, salt and baking powder in a bowl. Gradually mix in raisins so they are evenly distributed. Add margarine in small cubes and mix with fingers or pastry blender until evenly blended.

3.       Whisk together eggs and milk in a small bowl. Gradually stir into flour mixture until soft dough forms; work dough with hands if necessary, but do not over work.

4.       Drop scant ½ cup amounts of dough onto 2 greased baking sheets. 

5.       For egg wash, beat together egg and milk in a small bowl. Lightly brush each scone with wash.

6.       In two batches, bake scones in 350 oven for 20-23 minutes or until golden.

March 2010 Reading List


I am enjoying a warm cup of Chamomile tea and cookies while reading A Light In The Window by Jan Karon. I got the Lofthouse lookalikes from Aldi, $1.99 for 10 which is a special treat because I don't buy cookies from the bakery section of stores very often. I have not made it very far into my February 2010 Reading List so I will continue it in March. I did finish "A Victorian Christmas Series" by Catherine Palmer and At Home In Mitford book #1 in the "The Mitford Years Series" by Jan Karon.

I hope your day is delightful and that you've found a quiet moment somewhere to curl up with a good book.
