Wine Country Chicken Salad



4 chicken breasts (boneless, skinless), cooked and chopped into one-inch cubes
1 bunch red seedless grapes, cut in half
2 celery stalks, cut in half lengthwise, then chopped finely
1 cup chopped walnuts
1/2 to 3/4 cup mayo (or to taste)
1-2 tablespoons Apple Cider vinegar
2 teaspoons poppy seeds or celery seed
salt and pepper to taste

In another bowl, combine the chicken, grapes, celery and nuts. Pour mayo/vinegar mixture over chicken and veggies then mix together. Cover and place in the refrigerator for two hours (or overnight) to chill and allow flavors to heighten. Serve with whole grain bread or crackers with dark green leafy lettuce. Delicious, nutritious, and refreshing on a hot day!
